Sweet Potato and Black Bean Chili

- 1 large sweet potato, peeled diced
- 1 15 ounce can of black bean rinsed
- 1 small yellow onion, diced
- 1 small red pepper, diced
- 2 stalks of celery, diced
- 3 gloves of garlic, minced
- 1 15 ounce can of diced tomatoes
- 2 cups of chopped frozen spinach (optional)
- 2 cup of veggie stock or broth
- 1 tbsp of garlic powder
- 1 tsp of cumin
- 1 tsp turmeric
- 1 tsp of salt
- 1tsp of pepper
- 1/2 tsp of chill powder
- 1/2 tsp of chipotle powder
- 1 tsp of curry
- 1 tsp of oregano
- 1/2 tsp of liquid smoke
- 1 tbsp of BBQ sauce
- 2 tbsp of olive oil
- 2 cups of chopped frozen spinach (optional)
- 1 cup of chopped cilantro, optional
