My take-aways from High on the Hog: How African American Cuisine Transformed America

Things I didn’t know, sort of knew, and suspected…

1.      It is abundantly clear that enslaved Africans created American cuisine as we know it today.

2.    America's thriving rice industry would not have existed without the skills and knowledge enslaved Africans had in engineering and cultivating rice fields.

3. Black Cowboys! How can it be that 1 in 4 cowboys was Black, but this information has been mostly erased from mainstream history?
