Cucumber and Radish Salad
This cucumber and radish salad is the only one you’ll want to make on hot Summer nights.
I discovered this stupid, easy salad when having an impromptu dinner with friends a few weeks ago. The salad is pretty popular in Eastern Europe and has several variations.
I’m not a huge fan of radishes but in this dish they pair brilliantly with cucumbers. A simple toss with sour cream and fresh dill adds a layer of creamy coolness that’s much appreciated on those hot and humid days. It’s even better the next day served on its own or with smoked salmon for breakfast.

- 1 English Cucumber, sliced thin
- 15 radishes (1 ½ bunch), trimmed and sliced thin
- 1 cup fresh dill, chopped
- ¾ cup of regular or low-fat sour cream
- ¾ tbsp kosher salt (or according to your taste)
- 1 tsp cracked black pepper (or according to your taste)
