Bacon Vidalia Bourbon Jam
You’ll be putting this jam on everything!!! From baked beans to your favorite burger, you can’t go wrong with this jam and it will be expected at every BBQ you host from now on.

Bacon Vidalia Bourbon Jam

Ingredients
- 2 pounds of GOOD slab bacon
- 1 1/2 cups chopped Vidalia onion
- 4 large cloves garlic, minced
- 3/4 cup brown sugar
- 1/4 cup sherry vinegar or red wine vinegar
- 2 tbsp balsamic vinegar
- 2 tbsp bourbon
- 1 -2 tsp water, if needed
- 6 sprigs fresh thyme
- 1 tbsp Black pepper
- 1 tsp of crushed red pepper flakes

This jam is even better the next day. Feel free to punch up the flavor by adding your favorite spices.
I suggest a couple of dashes of Cayenne red pepper IF you like heat and sometimes I add in 1 - 2 tbsp of maple syrup for an extra hint of sweetness.
