1 cup semi-pearled farro
1/2 lb ground Italian sausage
1 small onion; finely chopped
2 garlic cloves, chopped
2 tablespoons olive oil
4 large tomatoes
1/4 cup grated Parmiggiano-Reggiano
salt, to taste
freshly-ground black pepper, to taste

If you cannot find ground Italian sausage at your grocer or butcher, take 3 Italian sausage links, remove the casings and break up the meat while frying.
